As our Sous Chef, you’ll report directly to the Chef De Cuisine, working in a vibrant, hands-on environment that emphasises flawless product execution, safety, and creativity. Cucina Porto is a multi-award-winning Italian casual dining restaurant led by the award-winning talented Chef Martino Pulito. Known for authentic flavours and innovative dishes, we are a destination for those passionate about culinary excellence.

The salary on offer for this role is $105,000 inclusive of superannuation + bonus ($92,925 + 11.5% super).

 

A few of your responsibilities:

  •  Participate in preparing menus and pricing policies by applying a sound knowledge of the following: local requirements, market needs, competition trends, recipes, daily specials and availability of products.
  • Assist the Restaurant Chef de Cuisine with rosters and leave applications for all personnel, and coordinate daily operational staffing requirements ensuring that The Star Enterprise Agreement, policies and procedures and statutory requirements are adhered to
  • Advise the Chef de Cuisine on employees’ progress and responsibility levels in accordance with personnel guidelines.
  • Participate in all shift briefings to assist with the smooth transition and handover between shifts, thereby avoiding interruption to or jeopardising the quality of guest service

 

What we will be looking for: 

  • Culinary expertise: A Culinary School graduate with a strong foundation in Italian cuisine, especially in pizza and pasta preparation.  
  • Organisational excellence: Exceptional organisational and communication skills.  
  • Leadership skills: Proven ability to lead, inspire, and manage a team effectively.  
  • Flexibility: Availability to work rotating shifts, including weekends and public holidays.
