Nineteen at The Star has offered an elevated dining experience to its guests since first opening their doors on the Gold Coast in 2018. Showcasing a chic rooftop restaurant and sundrenched lounge bar, the venue features incredible views of the glittering Gold Coast skyline and a luxe rooftop location. 

Situated on level 19 of The Darling Hotel, the restaurant showcases a 90-seat dining area, opening out onto an infinity pool with sweeping views across the Pacific Ocean, as well as a private dining area catering to more intimate functions. A stand-out is the restaurant’s impressive, double-heighted, glass framed wine room with a capacity to hold more than 3,500 wine bottles.

With a commitment to sourcing premium and sustainable produce, the team works closely with farmers & producers to curate and present their menu with finesse and culinary craftmanship in a way that reflects their respect for nature’s gifts. We feature grass, grain and wagyu beef, AOC oysters, Australian bay lobsters just to name some of our produce list.  A wood fire grill and oven feature as a thread that runs through the menu offering. Whether it is our steaks or duck from our dry aged cabinet kissing the grill or some of our coral trout roasted in the wood fire oven. The kitchen is open to the dining room allowing a seamless extension between chef and our guests to create a real hospitality experience.

Ideal candidates will have the following:

  • Extensive industry experience with a proven ability in culinary, coupled with a natural people management style who enjoys bringing the best out in the team
  • Previous experience in a high-volume, well recognised Restaurant (Hatted ideal) and comfortable in dealing with high-expectation clientele
  • Extensive knowledge of European cuisine with the ability to use Eastern and Western ingredients, with Wood fire cooking experience (favourable)
  • Comfortable working in partnership with different teams to take ownership for the efficient and effective operation of the outlet and all work activities.
  • Comfortable writing menus, recipe development, plate presentations and implement special items
